Chef Kyle's Quail Egg Breakfast Bake

Kyle Crawford — our resident culinary wizard — has a gift for turning a handful of simple ingredients into something you'll want to make every weekend. A generous layer of melty mozzarella forms the base, topped with onion rings, smoky bacon bits, and Spring Creek quail eggs baked until just set with perfectly crispy edges. Everything bagel seasoning ties it all together, and a shower of fresh chives finishes it off.

Ingredients

    • 2 cups mozzarella, shredded
    • 4-6 small rings of onion, thinly sliced
    • 1/4 cup Kirkland bacon bits, cooked
    • 6–8 Spring Creek quail eggs
    • 1 tsp everything bagel seasoning
    • 2 tbsp fresh chives, thinly sliced

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.

  2. Sprinkle mozzarella in an even layer over the parchment. Top with onion rings and bacon bits, then carefully crack the quail eggs on top. Sprinkle evenly with everything bagel seasoning.

  3. Bake on the bottom rack for 5–10 minutes, until the edges are golden and crispy and the egg whites are set.

  4. Remove from oven and let cool for 2–3 minutes. Sprinkle with fresh chives, then peel away from the parchment and serve immediately.
